Served with a side of fresh crusty bread. This will definitely warm you up on a cold winter day!

Ingredients

  • 2 butternuts cubed
  • 2 tablespoons olive oil
  • 1 large white onion diced
  • 2 cloves garlic crushed
  • 2cm ginger grated
  • 200ml vegetable stock or bone broth
  • 1 tin coconut milk
  • Salt and pepper for seasoning

Method

  1. Dice the onions and add to a large sauce pan along with the olive oil.
  2. Cook until the onions soften (around 2-3minutes)
  3. Once the onions are soft, add the crushed garlic and cook for another 2minutes
  4. Add the butternut and grated ginger to the saucepan and toss around until well coated in olive oil.
  5. Add the broth and the coconut cream to the mixture and bring to a simmer.
  6. Once simmering leave to cook until butternut is soft (around 20minutes)
  7. Once cooked through remove from heat and blend using a hand held blender.
  8. Season with salt and pepper
  9. *optional*add a sprinkle of pumpkin seeds and dollop of fresh cream
