Chewy chocolate coconut brownies

A delicious treat for the whole family to enjoy! Even though most of the ingredients are "healthy alternatives" the calories still add up - so enjoy in moderation.


  • 200g 80% dark chocolate 
  • 150ml of coconut oil 
  • 300g of coconut sugar 
  • 130g plain flour 
  • 3 eggs beaten 
  • 1 cup chopped mixed nuts 


  1. Preheat over to 160 degrees 
  2. Melt chocolate in glass heatproof bowl over boiling water. 
  3. Once melted remove from heat and start adding the coconut oil slowly. Stir until well mixed. 
  4. Add the coconut sugar to the melted chocolate and coconut oil and mix well. 
  5. Add the flour to the mixture and stir 
  6. Beat the eggs in a separate bowl, before adding SLOWLY to the mixture stirring all the time. Make sure the mixture isn't too hot still, and that the eggs are well mixed in so they don’t start to cook! 
  7. Stir in the chopped mixed nuts 
  8. Spoon the mixture onto a lined baking tray and pop in the oven for 30-40minutes or until the top starts to look flakey. 
  9. Leave in tin to cool, before slicing into squares, 
  10. Store in an airtight container once cooled.
