With Shrove Tuesday aka Pancake Tuesday just around the corner I thought I would share my favourite pancake recipe. They aren't too unhealthy either!

Ingredients

1 cup all purpose flour

1 teaspoon baking powder

1/2 teaspoon bicarbonate of soda

1 pinch of salt

3/4 cup butter milk

1 egg

2 tablespoons of melted butter (or you could try coconut oil)

Method

Mix the dry ingredients together in a bowl. In a different bowl whisk the wet ingredients together. Combine the wet and dry ingredients together and whisk until all the lumps are out.

Heat a large non stick frying pan. Once well heated, add two to three tablespoons of the pancake batter to the pan. Wait until you see bubbles starting to appear and then flip over. (Don’t worry if the first one doesn't work out - I always use the first one as the trial pancake to test the temperature and cooking time on each side. It’s also a good snack for while you cook the rest of the pancakes.)

Serving - Stack 3 - 4 pancakes on top of each other and pour over organic maple syrup, bananas and blueberries. ENJOY!
