There is nothing better on cold rainy evening than a delicious bowl of sweet potato soup. This tasty soup is packed full of nutrients and the perfect meal to warm you up.
  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 diced onion
  • 1 stem of celery diced
  • 2 cloves of garlic minced
  • 2 cups chicken bone broth
  • 1/2 can coconut cream or milk
  • 1/2 teaspoon grated ginger
  • Salt and pepper to taste
  1. Preheat oven to 200degrees. 
  2. Cut sweet potato into halves and rub with olive oil and sprinkle of salt. 
  3. Place on a baking tray in the oven for 30-45minutes.
  4. While the sweet potato is roasting add the butter, onion and celery to a pot, and cook until soft.
  5. Once soft add the garlic and ginger and cook for another couple of minutes.
  6. Add the chicken broth and coconut cream to the pot, and let it simmer for another 10minutes.
  7. Once the sweet potato is roasted, remove from the oven. Mash with a fork before adding to the pot.
  8. Cook for another 5minutes, then leave too cool for another 5minutes.
  9. Either using a hand held blender or blender, blend the soup to a smooth consistency.
  10. Sprinkle with your favourite toppings and enjoy!
